So I realize that its been far over a year since I've posted, but I've been busy with work, school and a toddler....so please forgive me. And if you don't forgive me just yet, maybe this will help you along...Pumpkin Waffles! Since the day after Labor Day I have been baking pumpkin goodies, its an illness...but I haven't had any complaints thus far. For this recipe I changed a basic waffle recipe that I usually use (I've added so many different things to this recipe) and here it is:

PUMPKIN WHOLE WHEAT FLAXSEED WAFFLES

3/4 c. wheat flour
1/4 c. Ground flaxseed
1 Tbsp. Sugar (optional)
2 tsp. Baking Powder
1/4 tsp. Salt
1/2 tsp. Pumpkin pie spice
1 egg, beaten
1 c. Water or almond milk
1/4 c. Pumpkin puree

•Mix together dry ingredients
•In a different bowl, whisk together wet ingredients
•Add wet ingredients to dry and whisk until incorporated
•Let sit for a few minutes while waffle iron heats
•Put 1/4 to 1/3 cup on each side of waffle iron (depending on how big your waffle iron is) and cook until done.

I added chocolate chips at my toddlers request (sure, I'm a push over). But, she ate 2! Hello fiber, omegas and vitamins in my toddlers tummy.

Week 1 of 28 done

So I did week 1 of the 28 Day challenge and it is still really hard to get up to work out...but I'm still doing it. I lost 5 pounds in said week and am super excited!! BUT, for some reason this excitement doesn't translate into me wanting to workout to continue the weight loss...I'm so complicated that even I don't get me.
However, I WILL continue the daily challenge! I also bought the Zumba Fitness DVDs (much to my husbands chagrin) because I LOVE Zumba!! and if I can lose weight doing it then heck yes!!
Have no fear I will keep all of my devoted blog readers (hello? anyone?) updated with my success...because there will be SUCCESS!!

Day one of 28-day challenge

Okay, as promised here are the before pictures...I'm not proud of these, but I'm going to make a change so there...

Here we go again...

I have decided that I need to lose that darn weight that I gained back when prego, (why can't it just go away?!). So I logged on to www.sparkpeople.com and joined their 28 day Boot camp challenge, I also made Lindsey do it... I will post a "Before" picture soon (its uploading). In the meantime I will be eating better and exercising more and give you weekly updates as to my progress. I just need a kick start into the whole workout thing again. My hopes are to be running by summer so that Livy and I can go for runs together in the mornings...running pssh...buuut I need to do something and running is free. 

I also want to fit into my darn clothes again! My yoga pants are too tight...yoga PANTS! SO, my ultimate goal is to be a size 8 by the time Laura returns from her mission which gives me about a year to drop 10 (don't judge me!) dress sizes...I CAN DO THIS!!! Please encourage me and if you see me eating something that I shouldn't be please smack it out of my hand and ask what size pants I wear...DO IT! If I drop my head and walk away in shame it is a good thing...sort of a mental butt kicking if you will.

To help myself further I will be giving up backed goodies for Lent this year...and I plan on succeeding. I know in the past I have given up with about a week left but this year I. WILL. Succeed! 48 days of no baked goodies and logging my food... *knock*knock* "Hello cellulite? Meet your doom!"

Thanksgiving

Olivia's first Thanksgiving was spent at Grandpa and Grandma Hurst's house in Juniper. It was gloriously filled with lots of food and laziness...no complaints here. Olivia spent Thanksgiving dinner asleep (also no complaints) which gave me ample freedom to stuff my pie hole with well, pie.

Olivia also played the piano during our visit...she didn't know quite what to think of it.
She did however end up playing some pretty awesome horror flick music thanks in large part to Auntie Jerica

pumpkin snowmen

I saw a segment on the Today Show where they made pumpkins into penguins and I thought why not make the little pumpkins into little snowmen...so here they are, white spray paint and pins
I'm not sure what I'm going to do about the hats and arms...any ideas?

Deener Time

While watching the Macy's Thanksgiving Day Parade (or more accurately the hosts babbling) I saw a commercial for Pillsbury crescent spirals...so I decided to try them.
I kinda twisted the recipe to suit my own liking...(but I did also try pepperoni and cheese and they were delicious dipped in pizza sauce). I used canned chicken and mixed it with Franks Red Hot sauce and pepper jack cheese. Serve them with a side salad and a bit of ranch for dipping and voila! Deener is served.

P.S. Fred Meyer sells the crescent seamless sheets that are tons easier to handle than the crescent rolls.
